What's the difference between food loss and food waste?The National Geographic article explains:Waste occurs toward the back end of the food chain,at the retail and consumer level.In general,the richer the nation is,the higher its per capita rate of waste.
Loss,on the other hand,mostly occurs at the front of the food chain —during production,post-harvest,and processing-and it's more common in the developing world,which tends to lack the infrastructure(基礎(chǔ)設(shè)施)to deliver all of its food,in decent shape,to consumers.
Take China for example.Writing recently in China Daily about the food loss and waste problem in the country,F(xiàn)an Shenggen,director general of the International Food Policy Research Institute,points out China loses 27.5 million tons of food a year because of poor storage and transportation.Major grain producing regions lack sufficient storage infrastructure,which not only increases food losses,but limits farmers' incomes.
In developed nations,hyper-efficient farming practices,plenty of refrigeration,and first-class transportation and storage ensure that most of the food they grow makes it to the retail level.But things go rapidly south from there,says the National Geographic article.
Store managers routinely over-order,for fear of running out of a particular product.The British supermarket chain Tesco,for example,admitted to throwing out nearly 50,000 tons of food within their UK stores during the latest fiscal year(財(cái)政年度),according to the National Geographic article.
Consumers are also to blame.We often order too much food in restaurants without taking leftovers home.We overbuy when there is a discount for attractively packaged food.When we store food,many of us take"use by"dates(最佳使用日期)literally,though such stamps were designed to communicate peak freshness and have nothing to do with food safety.And we suffer no consequence for throwing edible food into a bin.
